The brewers got a little crazy and decided our second sour would represent just that. Mella is a decocted sour, where we removed a large portion of wheat malt that was brought to a boil, then blended back with the remainder of our grain bill to create a complex malt flavor. It was then sent to our foeder where it soured with our haus lacto blend for a week. Fermented in steel with a clean ale yeast, it was then heavily fruited with passion fruit. Juicy notes and flavors of lemon gummy bears, passion fruit sorbet, freshly squeezed clementine and light oak, finished with an underlying sour tang.
