During the heyday of the British Empire, India Pale Ale was born as a strong pale ale brewed especially to endure the rigors of the long journey to the colonies. In order to guard against spoilage, I.P.A. was brewed with a high alcohol content and with liberal amounts of hops, which act as a natural preservative.
