This recipe reflects the joy and satisfaction Perronelle Chevallier, a renowned forager and long time Aspall matriarch, took from harvesting the blackberries in the hedgerows around the orchards at Aspall.
Salmon pink in colour, Perronelle's Blush has an excellent nose comprising a floral, appley and fruit aroma. Attractive apple & blackberry flavours define a sweetish palate, with good acid balance and a long finish of soft fruit flavour, and blackberry tones that enhance the finish.
